Local Farms = Fresh Ingredients
You have probably noticed all of these companies- from markets to restaurants promoting local farming. Why should it matter?
There is a logical reason why local farms are better - they are local. We've all been to the supermarket and bought an orange that came from Florida- it was picked too early and by the time it gets to our shelves- the inside is dry and the flavor is lacking to say the least. By going to the local farms we can get to know the owners- find out how organically they really are- build a relationship- and get first pick at ingredients that are picked off the tree or off the vine when ripe! NOT BEFORE it should be!
We get to know what's it really made of. This is true for meat as well as for produce!
For Produce one of the farms we use is Garcia Organic Farm- in Fallbrook - GREAT Avocados, Cactus, Citrus, FIGS, Mangos etc... Nicest people ever! And we get first pick! :) Which means as a client you win!
For Meat we use J&J Grassfed Beef! They are right in Tehachapi, CA! Their goal "to provide the healthiest quality all natural grass - fed beef available on the market. We do this by using consistent methods of sustainable production, intense managements, high quality genetics, and year round pasture grazing, NEVER confining our animals to feed lots". By doing this they insure their cattle is always healthy- producing healthy ORGANIC meat! We know it cost a bit more- but the quality is one that your guests should be very happy with!
We strongly support our farms - and we encourage all of you to do so when you can. There is a big difference between a Ralphs tomato- and one that you get a Farmer's Market which is organic! Do the taste test at home- you'll never go back!
